Paillet was born in Moulins-Engilbert (Nièvre) on March 31, 1871. He was an animalier and studied with the sculptor George Gardet.

Paillet exhibited at the Paris Salon beginning in 1897, including: Singe cynocephali (1898), Vatour (1903), Troupe d'Artistes, Combat de coqs (1909), Chat et perroquet (1911) and Chien jouant (1913). He received an honorable mention for his work in 1898, the third class medal in 1902, second class medal in 1904, and the gold medal in 1922.

In 1921, he first contracted with Leblanc Barbedienne Foundry to cast his group Chien et chat also known as Les Deux Amis. A proof of this work is in the collection of the Petit Palais in Paris.

Paillet died in 1937.
